Serve alongside stir fried veggies with rice.
BAKED ALMOND CHICKEN:
4 chicken breast pieces, cut into 1″ strips
1 lg egg
3/4 c almond meal (you can blend almonds into fine meal for this)
1/2 c organic corn meal
1 tbsp ground flax
1 tsp salt
1/8 tsp cayenne
3 tbsp honey
1. Preheat oven to 400 F
2. Mix the dry ingredients in a large baking dish for the chicken. Dip each chicken leg in beaten egg, and toss with the crumb mixture in the pan.
3. Drizzle with honey, and bake 15 minutes.
