I was craving some baking and am trying to keep us away from wheat as much as possible. Kamut is great to bake with, has more protien and is easier to digest. My little one loved them too! Throw in some dark chocolate chunks for added yumminess.
3/4 c softened butter (or sub 1/4 cup of coconut oil or nut butter for some of the butter)
1/2 c unsweetened organic applesauce
1/2 c sucanat
1 c kamut flour
2 c large flake oats
2 tbsp ground flax seed
1/2 c organic raisins
1/4 c sunflower seeds (optional)
1 tsp non-aluminum baking soda
1 tsp salt
1 1/2 tsp cinnamon
Preheat oven to 375 F. Mix wet ingredients and sugar. Mix dry ingredients in separate bowl. Combine well. Place on baking sheet and bake 12 minutes.
