Quinoa is full of protein, calcium and iron, it’s gluten free and there are so many dishes you can add it to… 🙂 So I challenge you to add it to your diet if you haven’t experimented with it yet! Make sure you buy a fine mesh strainer as well as it is bitter if not rinsed well due to natural protective coating.
I usually soak it (and most other grains I cook with) to bring out more nutrition. With this salad I don’t need to do that prepping though, makes a simple yummy salad! Adapted from Cynthia Lair’s quinoa salad.
QUICK QUINOA SALAD
1 c dry quinoa
8 c water
pinch sea salt
1/4 c carrots, chopped finely
1/4 c red pepper, chopped finely
1/3 c parsley, minced
1/4 c sunflower seeds
2-3 cloves garlic, minced
1/4 c freshly squeezed lemon jiuce
2 tbsp extra virgin olive oil
2 tbsp tamari
Rinse and drain quinoa through a fine strainer. Dry roast on low heat about 5 min, stirring constantly. Bring water to boil in large pot; add salt and quinoa. Boil 10-12 min. Drain quinoa through strainer. Prepare dressing and place in large bowl Add other ingredients and toss well. Serve at room temp or chilled.
