My hubby’s fave! Great with potatoes and roasted veggies.
1/4 cup of uncooked quinoa
1 pound lean ground beef
2 eggs (I’ve also subbed chia*)
1 medium onion, chopped finely
up to 1/2 c grated carrot, grated zucchini, finely chopped bell pepper, or combination
3 garlic cloves, minced
1/2 minced chili pepper or a couple dashes of chili flakes
1/4 tsp chili powder
1 teaspoon Thyme
1 teaspoon Rosemary
1/4 teaspoon black pepper
1 teaspoon salt
Rinse and cook quinoa.
Preheat oven to 350 F.
Chop onion, veggies, and garlic cloves. Mix with egg, oil, and spices.
Add beef then cooked quinoa, and mix together thoroughly.
Grease a loaf tray with coconut oil. Add the mixture, and press only very gently into the pan (keeps it moist and cooks more evenly) then bake for 1 hour.
* substitute 1 Tbsp chia / 3 Tbsp water for 1 egg
